Spaghetti Squash Breadsticks

Spaghetti Squash Breadsticks (4 servings)

1.5 hours prep and cook time (with cooking spaghetti squash included)

Ingredients:

1 spaghetti squash cooked and chopped

1 egg

1 cup breadcrumbs (can use gluten free)

1 cup diced mozzarella cheese

1/2 cup sliced mozzarella cheese

3 tbsp shredded parmesan cheese

1 tbsp Italian seasoning

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp salt

1 tbsp olive oil

1 tsp pepper


Preheat oven to 450 degrees. Spread olive oil evenly on bottom of baking sheet (or pizza stone!) and set aside. Blot spaghetti squash with paper towels to dry it out then put in mixing bowl with egg, breadcrumbs, 1 cup mozzarella, parm cheese, and seasonings. Incorporate evenly. Spread mixture thinly onto baking sheet and top with 1/2 cup mozzarella cheese. Add any other toppings - I had Beyond Meat Italian Sausage and leeks! Bake for 40 minutes. Serve hot and enjoy!
